Abstract

Probiotics are key food microorganisms that have a positive influence on the host by balancing intestinal flora. Over the past few decades, research has demonstrated that the use of probiotics helps improve the body’s health, enhance body strength, and fight diseases. Approximately 10^14 microorganisms reside in the human intestine. Most of them regulate physiological and homeostatic functions in the human body. Physiological effects include the production of vitamins and digestive enzymes, lowering intestinal pH, producing antibacterial substances such as bacteriocins and hydrogen peroxide, reducing blood cholesterol, stimulating the immune system, controlling infectious bacteria, excreting carcinogenic materials, and strengthening bones by increasing calcium absorption. Most probiotics belong to the large group of lactic acid bacteria. Due to their importance, probiotics have been artificially added to dairy products, such as yogurt and cheese, to serve human health.
